Coffee, Ganache & Buttercream!



This blog post is a quick presentation of two of my last Youtube tutorials - all the recipes and videos can be found by clicking on the pictures below ;)



For those of you who know, I launched two classes, an all-about-ganache course called Ganache Perfect, and one about The Art of Buttercream (and for those of you who don't know, you can find both classes here - trust me, it's worth having a look ;))


In the Ganache course, I explain why I never use the same white chocolate ganache to cover a cake and to fill it. To cover a cake, I use the usual 3 to 1 White Chocolate/Cream ratio ganache for strong and sturdy cake edges.


To fill my cakes on the other end, I am looking for smoothness and beautiful melt-in-the-mouth texture. And with three parts of chocolate for one part of cream, you JUST CAN'T GET THAT. It is as simple as that.


To show you how I make this very filling Ganache (that I also use to fill my macarons), I made a Youtube video!


And to make it more fun, and show you how you can also flavour it, I have infused this ganache with whole coffee beans, and while I was at it, made a Biscoff sponge because let's face it, Biscoff & Coffee is one of the best flavour combos, am I right?!



The truth is, I am OBSESSED with coffee... So every chance I've got, I will flavour my cakes with it, Ganache or not. But how to flavour a buttercream with coffee, when unlike ganache, you can't really infuse your butter with whole coffee beans?


Well, I've got you covered there too! In my Art of Buttercream course, I share my Coffee Exctract recipe! This homemade coffee flavour is basically a thick coffee syrup that you will be able to use again and again in everything cake: Buttercream of course, but also any kind of frosting (and that includes Vegan frostings!), Sponges, Syrups, etc, etc. And what's more, it keeps for months in the fridge. So if you use coffee in your cakes regularly like I do, then you are all sorted!
